Roasted butternut pumpkin with burrata and prosciutto ham
INGREDIENTS
- Butternut pumpkin
- Burrata cheese
- Prosciutto ham
- Cashew nuts
- Butter
- Sage
- Olive oil
- Toasted chili flakes (optional)
RECIPE
- Roast the butternut pumpkin at 220°C in an oven for 15 to 20 minutes.
- Once cooked, you can either char the pumpkin over a grill or use a flame gun to lightly torch the cooked pumpkin.
- Melt 2 tbsp of butter on a sauce pan. Once it starts bubbling, add in some sage. Fry over medium heat until crispy.
ASSEMBLY
- Put the butternut pumpkin onto a serving dish of your choice (we picked the Casato Long Casserole Tray).
- Place the burrata cheese on the pumpkin, and drizzle the sage butter mix on top.
- Sprinkle some cashew nuts over the dish.
- Add in some prosciutto ham, and drizzle with olive oil.
- Last but certainly not least, if you're a spice lover, feel free to add in some toasted chili flakes!
Smashed potatoes with scallions
INGREDIENTS
- Potatoes
- Scallions
- Butter
RECIPE
- This one is so easy but so good. First, cut the potatoes in half, and boil them in salted water.
- Once the potatoes are cooked (poke them with a fork to gauge if they are done), remove them from the water and pat them dry.
- Once the potatoes are more or less dry, use a spoon to gently flatten them before adding salt.
- Butter a pan and fry the flattened potatoes over medium heat.
- Once the flattened potatoes are crispy, take them out and garnish with scallions.
- And voilà! Serve on a dish of your choice (we chose the Wabi-sabi Ecru Double Handled Dish).
